Dr. Carl Jung was a pioneer in this field, with the process allowing for the production of non-alcoholic wine, a market that grew significantly, especially during Prohibition. By creating a high vacuum, the boiling point of alcohol is significantly lowered, allowing it to evaporate without damaging the wine. The natural wine aromas released during the distillation process are collected and introduced back into the dealcoholized wine, maintaining the wine's bouquet.
