The wine is made from 100% Pinot Grigio using traditional winemaking. After vinification, the alcohol is carefully removed via vacuum distillation. By creating a vacuum, the boiling point of alcohol is lowered, allowing the wine to be gently heated to approximately 30°C. The volatile aroma components are first separated and stored separately. Once the alcohol is fully removed, the natural bouquet is reintroduced into the wine, preserving the original aromas and sensory characteristics as much as possible.
