Dealcoholisation detail
After fermentation is complete, dealcoholisation is carried out using vacuum distillation. Under reduced pressure, the boiling point of alcohol is lowered, allowing it to evaporate at a significantly lower temperature than under normal pressure, thereby protecting the delicate Riesling aromas. Reverse osmosis is also mentioned as an additional technique where the wine passes through special membranes under pressure to separate alcohol and water from the aroma-bearing components, after which the cellar master recombines the appropriate components.
