The rosé wine is de-alcoholised by low-temperature vacuum distillation, a technique that preserves the original aromas and flavours. Once the alcohol has been eliminated, concentrated grape must is added to restore the taste balance. Afterwards, carbon dioxide is added to obtain a fine bubble and isobaric bottling is carried out to preserve all the qualities.
