Vineyard
Grapes come from vineyards around Radebeul in Saxony, on steep slopes and terraced sites influenced by the Elbe river. The soils are loess and sandy, storing warmth during the day and releasing it at night, allowing the grapes to ripen slowly and develop a clear, cool aromatic profile with a fine acid structure.
Dealcoholisation detail
The estate carefully removes the alcohol using gentle vacuum evaporation (vacuum distillation). This process preserves the fruit, acidity and aromatic compounds to a large extent while reducing the alcohol content to 0.0% ABV. The wine is subsequently carbonated via tank carbonation, during which carbon dioxide is added to create the fine, even mousse.
