Dealcoholisation detail
After barrel maturation, the wine undergoes dealcoholisation using two methods, often in combination: vacuum evaporation at low temperatures to preserve key aroma compounds, and reverse osmosis with multi-stage filtration. Both methods aim to remove alcohol while retaining aromas, using low temperature and pressure to minimise impact on texture and fragrance. Following dealcoholisation, the cellarmaster refines the style with a brief ageing on fine lees to add fullness, creamy texture, and fine smoothness.
