Dealcoholisation detail

The wine uses an 'aroma recovery system' during dealcoholisation. The first 5% of alcohol released during the dealcoholisation process is collected separately, as it contains all the aromas. Once the wine is dealcoholised, this 5% fraction is added back and a second dealcoholisation takes place. This process retains approximately 90% of the original aromas. The wine cannot be made completely 0.0% alcohol, resulting in approximately 0.3% residual alcohol.
