Dealcoholisation detail
Alcoholic fermentation is stopped before completion so that the finished wine contains no alcohol. The grapes are harvested by hand and processed gently; after mild pressing, fermentation takes place at low temperatures to preserve delicate fragrance nuances. Fermentation is arrested prior to full completion, after which a controlled perlage with fine carbon dioxide is added to create the characteristic semi-sparkling effect. The wine then matures in temperature-controlled stainless steel tanks.
