Dealcoholisation detail

This wine is not dealcoholised. It is a verjus-based product: grapes are harvested in early August while still unripe and low in sugar, pressed, and the juice is filtered to prevent fermentation from starting. A small amount of water is added to soften the high acidity, then the wine is bottled directly under screw cap. No fermentation or dealcoholisation takes place.
