Vineyard

The grapes come from selected sites of the traditional Weingut Hammel in the Palatinate (Pfalz). The sun-drenched climate with warm days and cool nights supports a slow, aroma-rich ripening of the Sauvignon Blanc grapes. The vineyard soils are predominantly a mixture of loess, sand, and calcareous components, which gives the wines a clear minerality, pronounced fruit, and a distinctly perceptible freshness.

Dealcoholisation detail

After a controlled, cool fermentation in stainless steel tanks, the wine undergoes dealcoholisation using modern cellar technology, often via vacuum distillation or comparable processes. The low temperatures during this step preserve the characteristic aromas of the grape variety to a large extent.
