Dealcoholisation detail
After fermentation in stainless steel tanks, the wine undergoes dealcoholisation using vacuum evaporation (Vakuumverdampfung), where reduced pressure allows alcohol to be removed at low temperatures, preserving the finest aromas. Reverse osmosis is also mentioned as an alternative step, where a special membrane separates alcohol and water from the aromatic core of the wine. The aromatic components are then recombined with the base wine.
